Quinoa Banana Nut Bread
Makes 1 loaf


2 eggs
1/2 C. SHILOH FARMS Organic Maple Sugar
1/3 C. canola oil
1 tsp. vanilla extract
1 C. mashed banana
1¾ C. SHILOH FARMS Organic Quinoa Flour or PURELIVING Organic Sprouted Quinoa Flour
2 tsp. aluminum-free baking powder
1/2 tsp. SHILOH FARMS Himalayan Pink Salt
½ C. SHILOH FARMS Organic Walnuts, coarsely chopped


1. Preheat oven to 350°
2. In large mixing bowl, whisk together eggs, maple sugar, oil, and vanilla; add banana and stir to combine
3. Add remaining ingredients to banana mixture, stirring until just combined
4. Pour batter into lightly oiled loaf pan; bake in preheated oven for 45 minutes, or until toothpick inserted near center comes out clean
5. Remove from oven and allow to cool in pan for 5 minutes before turning out; allow to cool completely before serving
