High in protein, vitamins, and minerals, SHILOH FARMS Quinoa Flour is a versatile and exceptionally nutritious addition to any baker's pantry. 

Of the various alternative grain flours, quinoa flour performs most like barley and yields a delicate, delicious crumb. Its slightly higher fat content (compared to wheat flours) produces moist, springy baked goods.

Considered sacred by the ancient Incans, quinoa was first domesticated in the Andean region of South America over 4,000 years ago. Though widely considered to be a grain, this is technically not true - quinoa is actually a seed or pseudocereal, similar to buckwheat and amaranth. However, it is generally treated as a grain and can be easily substituted for other grains in a variety of recipes and applications. 

In addition to its versatility and great taste, quinoa also provides a rich and balanced source of vital nutrients. The highest in protein of all the grains, quinoa contains 9 essential amino acids, meaning its protein is high quality, on par with milk or meat. Naturally gluten free, quinoa is also an excellent source of magnesium, calcium, iron, and fiber. 

Usage: Because it contains no gluten, quinoa flour cannot be wholly substituted for wheat flour in bread recipes. However, a small percentage (10-20%) of quinoa flour in a bread recipe will yield a lighter, more nutritious loaf. In other recipes, such as cakes and cookies, you can substitute anywhere from 50-100% of the called-for flour with quinoa flour. Generally, quinoa flour can be substituted for 50% of the flour in a baking powder-risen recipe and 25% in a yeast-risen recipe. 

1. Substitute for a small amount of flour in quickbreads, pancakes, cookies, and other baked goods for a protein-boost.

2. Quinoa flour adds a nutty, slightly earthy flavor to baked goods. It pairs especially well with warmer spices like cinnamon and clove. 
3. Make savory crackers and flatbreads.
4. Use as a thickener in soups, stews, gravies, and sauces.
5. Add to breadings or coatings for chicken or fish.

6. Use as a binder in meatloaf, hamburgers, or meatballs.
