Gingerbread with Rice Flour
SHILOH FARMS Brown Rice Flakes are made from partially cooked organic brown rice grain that is sliced, flattened with rollers, and dehydrated, making them a quick-cooking and convenient food.
Rice flakes cook to a soft, mushy texture, but not with an overly glutinous consistency. Their flavor is exceptionally mild, making them the perfect blank canvas for other spices and flavors both sweet and savory. Cooked rice flakes expand only about 25 percent from their dry volume.
To Cook: Boil 1¼ cups of water. Stir in 1 cup of rice flakes. Lower the heat and simmer, covered for 5-8 minutes, or until the water is completely absorbed. Alternately, remove from heat after adding the rice flakes and let sit covered for about 10-15 minutes, or until the water is completely absorbed.
Suggestions:
1. The mild flavor of our rice flakes makes them a great addition to spicy or sweet recipes.
2. Substitute for cooked corn meal or mashed potatoes in recipes
3. Substitute cooked rice flakes for cooked rice in rice pudding recipes.
4. Add 1/2 cup of cooked rice flakes to the batter for muffins and quick breads to provide a pleasant flavor and moist texture.
5. Add 1/4 cup of uncooked rice flakes to muffins, quick breads and pancake batters for a chewier texture.
6. Add raisins or diced dried fruits to the flakes as they are cooking (about the last 3 to 5 minutes of cooking time).
7. For an unusual twist, add cinnamon and chopped nuts.
8. Use flakes instead of bread crumbs in casseroles or as toppings.
9. Use for a delightful topping for pies and fruit crisps.
10. Use in grain burgers, add to hamburgers or meat loaf.
