Shiloh Farms Date Nut Bread (w/ Spelt Flour & Deglet Dates)

Yields 1 loaf


1 C. boiling water
1 tsp. baking soda
2 C. Shiloh Farms Organic Deglet Dates, chopped
3/4 C. Shiloh Farms Organic Date Sugar
2/3 C. coconut milk (refrigerated)

6 Tbsp. coconut oil, melted & cooled
1 large egg, beaten
2 C. PureLiving Organic Sprouted Spelt Flour
1 tsp. aluminum-free baking powder
1/2 tsp. Shiloh Farms Himalayan Pink Salt
1 C. Shiloh Farms Organic Walnuts, Organic American Native Pecans, and/or Organic Raw Pistachios


1. Preheat oven to 350°; spray 9" loaf pan with no-stick cooking spray
2. Combine hot water, baking soda, and chopped dates in large bowl; let stand 15 minutes
3. Add date sugar, milk, oil, and egg; stir well to incorporate
4. Sift in flour, baking powder, and salt; add nuts and mix until just combined
5. Pour batter into prepared loaf pan; bake 55-60 minutes or until knife inserted in middle comes out clean
6. Remove from oven and cool in pan for 10 minutes before turning out onto baking rack; allow to cool completely before slicing
