Pasta and Pine Nuts

Pasta and Pine Nuts
Yields 4 servings


3/4 C. Shiloh Farms Organic Pine Nuts
8 oz. angel hair pasta
1/2 C. organic ghee
1¼ C. heavy whipping cream
1/8 tsp. nutmeg
1/4 tsp. Shiloh Farms Himalayan Pink Salt, or to taste
1/4 tsp. white pepper, or to taste


1. Toast pine nuts slowly in dry skillet until frangrant and golden brown; remove and set aside
2. Cook pasta according to package directions until al dente; drain, reserving 1/4 C. of the pasta water
3. While pasta cooks, combine ghee, cream, nutmeg, salt, and pepper in saucepan; cook over medium heat until sauce reduces to creamy consistency
4. Add pasta and reserved pasta water to sauce and stir to evenly coat noodles; adjust seasoning as needed and cook an additional 3-5 minutes
5. Top pasta with toasted pine nuts and serve
