Vegan Blueberry Walnut Bread

Ingredients:
1 cup Shiloh Farms Flour
1 cup plus 2 Tbsp.Shiloh Farms Toasted Wheat Germ
2-1/2 tsp. Baking Soda
1/2 cup of Shiloh Farms Walnuts - chopped
1 cup of Blueberries - Fresh, Frozen or Shiloh Farms Dried
1 cup plus 1 Tbsp. Soy Milk
5 tsp. Apple Cider Vinegar
1 Tbsp. Maple Syrup
2-1/2 tsp. Vanilla Extract
1 Tbsp. Oil

Directions:   Peheat oven to 350°F.  
Combine Dry items: Flour, 1 cup of Wheat Germ, baking soda, blueberries and walnuts.  Combine Wet items: Soy milk, vinegar, syrup and vanilla.
Combine: both Dry and Wet together until thoroughly mixed.

Grease: a 9 X 9 glass cake pan with oil, then coat with the remaining wheat germ before adding the bread mixture.   Bake: 25 to 30 minutes or until just brown on the top. Cool and enjoy.
