Refried Anasazi Beans

1-2/3 c. SHILOH ANASAZI BEANS
1 large onion, chopped
3 Tbsp. safflower oil
1 tsp. Shiloh sea salt
1 c. grated Monterey Jack cheese

 

Soak beans overnight. Drain and rinse. Cover with water
and add 1 Tbsp. oil and chopped onion. Bring to a boil,
cover and simmer about 2 hours until beans are tender.
Drain, fry in 2Tbsp. oil for 10 minutes. Mash, add salt
and cook covered, adding small amounts of water until
beans form a very thick sauce. Sprinkle with cheese and
cook covered for about 10 minutes. Serves 6 - 8
