Potato and Rice Flour Muffins

1/2 cup Shiloh Farms Rice Flour
1 tsp. Baking Powder
1/2 tsp. Sea Salt
1/2 cup Shiloh Farms Potato Flour
2 Tbsp. Shiloh Farms Date Sugar
4 eggs, separated
2 Tbsp. ice water

Directions: Preheat oven to 375ºF
Sift together flours, baking powder and salt. Add date sugar. Beat egg yolks. Beat egg whites until stiff. Fold into yolks. Add flour mixture to egg mixture very slowly, folding in gently. Sprinkle with ice water. Mix gently. Spoon into greased muffin tins, bake at 375ºF for 20 min
