Curried Spelt Flakes With Rice and Peas

3 cup Water
2/3 cup Shiloh Farms Brown Rice
2/3 cup SHILOH FARMS SPELT (wheat) FLAKES
2 Tbsp. Butter
1 medium Onion, chopped
2 cloves Garlic, minced
1 Tbsp. Wheat flour
1 cup low-fat Milk or Soy milk
2 tsp. Curry powder
1 tsp. dried Mint
3 Tbsp. minced Cilantro/Parsley
Sea Salt to taste
Dash of Nutmeg
Dash of Cayenne pepper
2 cups fresh Peas, steamed
1/2 cup Yogurt

Directions:

Bring water to a boil. Stir in rice and spelt flakes. Cover. Simmer for 35-45 minutes.

Meanwhile, in large skillet, sauté onion and garlic in butter. Sprinkle in flour until blended. Slowly add milk, stirring as you pour.  Add seasonings.  Simmer over low heat until thickened.

Add rice and spelt flake mixture. Cover and simmer for 10 minutes on low heat.

Stir in peas. Cook 5 minutes. Remove from heat and top with yogurt and serve.
