Amaranth Stir Fry Vegetables

1/8 tsp Sea Salt
1 Tbsp. Olive oil
1 cup Leeks, chopped
1/2 cup sliced Mushrooms
1/2 cup Green Peppers, sliced
1 tsp. Soy Sauce
1/2 cup Bread Crumbs
1/2 cup Scallions, sliced
1/2 cup Shiloh Farms Pumpkins Seeds


Sort amaranth. Dry roast in a heavy skillet over medium heat for 5 minutes. Add to 3 cups boiling water. Boil several minutes. Reduce heat, cover and simmer 35 minutes or until water is absorbed. Sauté leeks in olive oil for 5 minutes. Add mushrooms and peppers, sauté 10 minutes, stirring often. Sprinkle with soy sauce and 1 tsp. water. Cover with bread cumbs, then top with cooked amaranth. Cover and heat through. Stir to combine. Garnish with scallions and pumpkin seeds.
