Lemon Basmati
Yields 2 servings


1 C. Shiloh Farms Organic Basmati Brown Rice
2 Tbsp. butter

1 leek, thinly sliced
2 cloves garlic, minced
2 cups chicken (or vegetable) stock
2 Tbsp. fresh lemon juice
1 tsp. lemon zest
2 medium tomatoes, seeded & chopped
2 Tbsp. fresh flat leaf parsley, chopped
Shiloh Farms Himalayan Pink Salt, to taste
black pepper, to taste


1. In large pot, saute rice, leek, and garlic in butter for about 5 minutes
2. Add chicken stock and bring to a boil; cover, reduce heat, and simmer 20-30 minutes, or until broth is absorbed
3. Remove from heat and stir in in tomatoes, lemon juice, and zest; let sit, covered, 5 minutes
4. Add parsley and season to taste; serve hot or cold
