Cran-Apple Quinoa Salad

Cran-Apple Quinoa Salad
Yields 10-12 servings


1½ C. apple juice
½ C. cranberry juice
2 C. water
2 C. Shiloh Farms Organic Tri-Color Quinoa or Organic Red Quinoa
1½ tsp. ground cinnamon
¼ C. extra virgin olive oil
¼ tsp. 
Shiloh Farms Himalayan Pink Salt
½ ground black pepper
zest of 1 lemon
3 Tbsp. fresh lemon juice

4 medium apples, diced
2 C. celery, chopped
1 C. Shiloh Farms Organic Cranberries
1 C. Shiloh Farms Organic Walnuts
4 Tbsp. fresh mint, chopped (optional)


1. Place fruit juices, water, quinoa, and cinnamon on medium saucepan and bring to boil; reduce heat to low, cover, and simmer 15-20 minutes, or until liquid is absorbed
2. Cool slightly, then transfer to large serving bowl and cover; refrigerate 1 hour
3. While quinoa cools, make dressing by whisking oil, salt, pepper, lemon zest, and lemon juice in small bowl; set aside
4. Once quinoa is cooled, add apples, celery, cranberries, walnuts, and mint; whisk dressing again, then pour over salad and stir to combine
5. Refrigerate 1 hour to allow flavors to meld
