Black Bean Hummus

Black Bean Hummus
Yields 6-8 servings


3 Tbsp. olive oil
½ medium onion diced (about ½ cup)
1 jalapeno pepper, seeded & diced (about 3 tsp.)
2 cloves garlic, minced (1 Tbsp.)
2 cups cooked Shiloh Farms Black Turtle Beans or PureLiving Sprouted Black Beans
1 tsp. cumin
1 tsp. fresh lime juice
1 tsp. black pepper
Handful fresh cilantro, chopped (about 1 Tbsp.)
Shiloh Farms Himalayan Pink Salt, to taste


1. Add 1 Tbsp. olive oil to medium pan over medium heat; sauté onion and jalapeno about 5 minutes, or until onion is translucent
2. Add minced garlic and sauté another 2 minutes
3. Transfer sautéed vegetables to food processor; add beans, cumin, lime juice, black pepper, cilantro, and remaining olive oil
4. Blend thoroughly, scraping down the sides of food processor to ensure a smooth consistency; season with salt
5. Serve with tortilla chips, pita wedges, or raw vegetables or use as a spread on sandwiches and wraps
