An excellent source of protein and fiber, SHILOH FARMS Organic Cashews also contain significant amounts of a number of minerals, including copper, phosphorus, magnesium, and iron. While rich in heart-healthy mono-unsaturated fatty acids, cashews are actually among the lowest-fat nuts available. Delicately flavored with a meaty texture, cashews are a delicious snack and welcome addition to a variety of sweet and savory dishes. Cashews are commonly found in Indian, Asian, and South American cuisines.

What we know as cashew "nuts" are actually the seeds of the cashew tree, a tropical evergreen native to Brazil. Unlike tree nuts, which are oily, cashews have a higher concentration of starches, making them an ideal nut to use as a thickener for stews and sauces. While some are allergic to cashews, they are typically less allergenic than tree nuts and peanuts.

1. Make cashew butter by processing cashews in the food processor until the mixture reaches the consistency of peanut butter; use as you would peanut butter on bread or crackers.

2. Cashews shine in curries, vegetables, salad, pasta, rice, stir-fries, stew, and desserts.
3. Unless intended as a thickener, do not add cashews to hot dishes until near the end of the cooking process as they will quickly become soft and begin to disintegrate.

• 1 pound cashews = 3¼ cups    

• 1 ounce cashews = 14 large / 18 medium nuts

Storage: Because of their high fat content, cashews should be kept in a cool, dry place in a tightly closed container. They also freeze well.

    These cashews are raw and certified organic. That is why I purchased them. They were packaged securely and tasted fresh. However, after I had opened them and consumed a few I found that they were very soft, not crunchy. I placed them in the freezer, and the next time they were crunchy.
