Vegetarian Lentil Soup

Vegetarian Lentil Soup
Yields 6-8 servings


2 C. PureLiving Organic Sprouted Lentils or Shiloh Farms Organic Green Lentils, sorted and rinsed
6 C. vegetable stock
10 oz. crushed tomatoes
2 Tbsp. tomato paste
½ large onion, choppped
6 cloves garlic, crushed
½ tsp. Shiloh Farms Himalayan Pink Salt, or to taste
¼ C. chopped Italian parsley
¼ C. chopped basil
2 bay leaves
red vinegar, to taste


1. Combine all ingredients except vinegar in large pot and stir to combine
2. Bring to boil, then reduce heat to medium-low and simmer about 1-1½ hours, or until lentils are tender and flavors have melded
3. Taste and adjust seasonings as needed
4. Spoon into bowls; to each serving, add about ½ tsp. vinegar
