Sorghum Grain, Organic

 Product Description

Sorghum Pilaf

With its hearty, chewy texture and delicate, neutral flavor, SHILOH FARMS Sorghum is a versatile grain with a wide variety of uses. Because it adapts well to other flavors and is naturally gluten free, sorghum is especially useful in replacing wheat products in many recipes.

Because it has a very thin hull, sorghum is typically eaten whole, meaning you get all of the nutrients of the natural whole grain. Sorghum is a valuable source of protein, fiber, iron, and magnesium and is relatively low on the glycemic index, making it a good option for diabetics.

An ancient cereal grain, sorghum is thought to have originated in Northern Africa over 8,000 years ago.

To Cook: Sort* and rinse. Bring 3 cups water & 1 cup sorghum to boil, reduce & simmer, covered for 1 hour or until grain is tender & liquid is absorbed.

Sorghum benefits from 6-8 hours or pre-soaking to help make it more easily digestible. However, it is not essential for cooking as the sorghum will cook without pre-soaking within 1 hour on the stove or 1/2 hour pressure cooking.

Suggestions:
1. Sorghum grain makes a perfect substitute for couscous, bulgur, and barley in soups and side dishes.
2. Use a hand mill or food processor to grind sorghum to the degree of fineness required (coarsely ground for a cooked cereal; finely ground for flour). Flour should be prepared fresh; if not using within a few days, store in the freezer.
3. Try popping sorghum grain! Smaller and lighter than traditional popcorn, popped sorghum has a similar flavor and light crunch.

  1. Perfect

I make mine in big batches and eat it throughout the week. It's my primary food source!

  2. Great Gluten Free Grain!

Posted by Carol M on 10th Feb 2018

This was the first time I ever bought and cooked sorghum. I was surprised how gentle this flavor is. It was great mixed in salad, or just combined with butter substitute and dried herbs for a quick snack. It's chewiness gives eating satisfaction even better than brown rice, which I also like. The sorghum is a great thickener for soups and was just right added to homemade chili. Really enjoyed it in a few ways.

I understand it's a staple grain in some African countries. Not sure why this grain isn't more popular in the US. Perhaps it's because it takes as long as brown rice to cook, but next time I'm going to try cooking more of it and freezing a couple of portions for quick meals later.

  3. Makes wonderful flour for bread

Posted by Unknown on 7th Nov 2011

I grind this sorghum into flour to make gluten free breads to feed my family. This is very fresh, delicious grain. Love it.
