Turtle Bean Burgers

1/4 cup Onion, chopped
8 oz. sliced fresh Mushrooms
1 cup Shiloh Farms Black Quinoa
1 vegetable bouillon cube
2 cups Shiloh Farms Oat Bran
2 fresh Egg whites
2 cups Shiloh Farms Black Turtle Beans, cooked
6-8 oz Salsa

Directions:

Preheat oven to 375°F.
Sauté finely chopped onions over low heat with 2 Tbsp. of olive oil until transparent. Turn up the heat, add and saute mushrooms. In sauce pan, add two cups of water and one vegetable bouillon cube. Bring to a boil; add quinoa, cover and simmer for 10 minutes or until quinoa is fluffy.  In a large mixing bowl add bran, cooked beans, egg whites and salsa. Add cooled quinoa and mushrooms. Mix thoroughly. Press mixture into patties.  Bake for 8 minutes then flip and bake for an additional 6 minutes. You can also freeze for another meal.
