Creamy SHILOH FARMS Heirloom Yellow Eye Beans are culinary chameleons! Very mild themselves (with a flavor described as similar to a potato), they absorb complex flavors well, making them an excellent addition to hearty soups, rich cassoulets, and smoky baked beans.
When cooked, this beautiful and versatile bean plumps and has a smooth, almost creamy texture. High in protein, complex carbohydrates, and dietary fiber, yellow eye beans are also an excellent source of vitamins and minerals, particularly Vitamin A and iron.
Also occasionally known as Butter Calypso Beans, this heirloom variety dates from at least the 17th Century.

To Cook: Sort and rinse. Cover with water and soak overnight. Drain, then bring 3 cups fresh water and 1 cup beans to boil. Reduce and simmer 1-1½ hours, or until tender. Drain and serve.
*Cold soaked and cooked at a very gentle simmer, beans should retain most of their nutrients.
Suggestions:
1. Swap for pinto or navy beans in soups, stews, and salads.
2. Try in traditional New England-style baked beans or casseroles.
3. Pair with smoked ham hock and seasonal vegetables for a simple and stunning entree.

I have not had opportunity to prepare any of these yellow eye beans yet, but they look fine. Very clean. I was delighted to find a source for them. As an old transplanted Mainer, Saturday isn't the same without baked yellow eye beans. I'm sure they will be delicious!

..BUT, I have made these in the past, they are delicious!! I love the fact that they are organic and non-GMO. Wish we could purchase in our state, for a much cheaper price and no shipping.

These are the best beans to use to make baked beans. I am glad I found them at Shiloh Farms! I have used nothing but Yellow Eye Beans for years to make my Boston Bake Beans.
