But don't think these big beauties are just for the holiday season - distinguished for their rich, chestnut-like flavor, buttery texture, and breathtaking swirls of plum, wine, and eggplant, they'll leave you in a merry mood year-round!

From warm and hearty stews to fresh, seasonal Spring salads, Christmas Lima Beans are sure to win over even the most ardent lima bean hater! You'll find a multitude of uses for this versatile bean: they hold their own against more assertive flavors (making them a unique choice for curries, chilis, and spicy soups), but are perfectly lovely on their own. And they retain their distinctive coloring even when cooked, producing a flavorful broth that some say is as good as the bean itself!

Native to the high Andean plains of Peru, Christmas Lima Beans were first brought to the United States in the mid-19th Century. Also known as Chestnut Lima Beans, Giant Speckled Lima Beans, and Calico Beans, this heirloom variety is an excellent source of protein, fiber, and complex carbohydrates.

To Cook: Sort and rinse. Cover with water and soak overnight. Drain, then bring 2 cups fresh water and 1 cup beans to boil. Reduce and simmer gently for about 1 hour, or until tender. Drain and serve.

*Cold soaked and cooked at a very gentle simmer, beans should retain most of their nutrients.

1. Prepare simply, tossed with olive oil and fresh herbs. 
2. Add to soups, stews, salads, or casseroles.
3. Pair with assertive flavors, like chili, curry, or garlic.
4. Serve alongside rich meats like lamb and pork.
5. Cook with meaty sauteed mushrooms for a hearty vegetarian dish.
6. Substitute for butter beans or other varieties of lima beans.
