"Just Like Mom's" Cookies

SHILOH FARMS Organic Barley Flakes provide another way to enjoy the many nutritious benefits of barley! Barley Flakes can be eaten hot or cold, and are a terrific alternative to oat flakes, resulting in a nuttier, slightly sweeter flavor and chewier texture. 

Naturally high in protein, fiber, and a variety of essential minerals (including manganese, selenium, copper, and phosphorus), barley has the lowest glycemic index of any grain (about 1/3 that of wheat), making it a great choice for diabetics. It also has a different gluten structure than wheat, meaning that some with celiac disease and wheat allergies are able to safely consume barley.

To create barley flakes, whole grain barley is first dehulled, then hydrated (usually through steaming). Next it is gently and briefly heated, before passing through a rolling mill and then cooled before packaging. This processing stabilizes the grain, meaning the enzymes are neutralized to prevent oxidation and rancidity. The heating transforms the starches to more simple sugars, making them more easily digested, but leaves the barley's vitamin and mineral content intact.

A rugged, sturdy grain, barley can be found throughout the northern hemisphere, from Asia to the Americas. 

To Cook: Add 1 part barley flakes and a pinch of salt to 2 parts boiling water. Reduce heat to low, cover, and simmer 5-8 minutes, or until liquid is mostly absorbed.

Suggestions:
1. Add raisins, cranberries, or other dried fruits to the flakes as they are cooking. The fruits will plump and help to sweeten the cereal.
2. Sweeten with honey, maple syrup, or your favorite natural sweetener; finish with toasted nuts.
3. Substitute up to ½ cup flakes for flour in quick breads.
4. Replace up to ½ the flour in pancakes with flakes.
5. Use flakes instead of bread crumbs in casseroles or as toppings.
6. Make a delicious crumble topping for pies and fruit crisps.
7. Mix with dried fruits, nuts, and seeds for homemade granolas, mueslis, or trail mixes. 
8. Use in vegetarian burgers, or add for substance to hamburgers or meat loaf.
9. Add to muffins, cookies, breads, or other baked goods.

    So far I've been through 6 16-oz packages of Shiloh barley flakes, and I'm working on the next 6. I usually prepare it as a savory, perhaps with some soy sauce and onion. I appreciate that the flakes are not toasted. It's a quick and easy way to prepare a whole grain.
