Old Fashioned Organic Steel-Cut Oats are the inner portion of the oat kernel which has been cut into about two or three pieces. They are golden in color. Steel Cut Oats are sometimes called Scottish or Irish Oatmeal. Steel Cut Oats are valued for their hardiness in cold climates and the distinctive hearty, chewy texture of steel cuts makes them a favorite.
Steel Cut Oats are from the Oat Groats grains that are enclosed in two tough husks that must be removed. The grains are cleaned and toasted in an oven for 1 minute using dry heat. This stablizes the oats to prevent them from becoming rancid by deactivating an enzyme (lipase) that produces a bitter taste. Toasting makes the 2 outer hulls easier to remove. What remains is a whole grain, containing the fiber-rich bran, nutritious germ, and the bulk of the grain: the endosperm. These Oat Groats are then cut by steel rollers thus making your favorite Steel Cut Oats that contain nearly all the original nutritional value of the Oat grain.
To Cook: Add 1 part of Steel Cut Oats to 4 parts of boiling water. Cover and simmer until water is absorbed about 40 to 50 minutes.
Sleep Tight - Soak overnight - Before going to bed, boil four cups of water in a pot, turn off the heat and add one cup of Steel Cut Oats. Cover the pot and leave overnight. In the morning cook over a low heat for 9-12 mins.
Pre-Toast - Place the steel-cut oats in a preheated 300°F oven for approximately 20 minutes. Return the oats to a tightly covered container, storing in a cool place. Toasted oats cook in half the time.
Cut Corners - Place the oats, natural or pre-toasted in a food processor. A few turns of the metal blade will break up the grains and reduce the cooking time by at least 5 minutes.
Be Prepared - One trick is to prepare five days worth of Steel Cut Oats in advance. This can be stored in an airtight container in your refrigerator and used as required. To reheat: Add a little liquid along with the amount of cooked Steel Cut Oats you require in a pan. Cover and set the heat to low for about 5 minutes.
1. Use as a hot cereal with honey, milk, nuts or fruits.
2. Add small amounts to baked goods for a hearty texture (especially good for griddle cakes and muffins.)
3. Add cooked steel-cut oats to vegetable or bean soups to lend thickness and substance.

Great product, reasonably priced.
The only issue I have encountered is when I puchase in 25# bags, 2 of the 7 I have bought have broken open at the seam during shipping.
Not much product was lost - not a huge deal, but would be nice if the bags were sealed a little better. no problems with the smaller packages. Also, the samples of other products included in each box are a nice touch.
