Black Beans are small (about the size of a pea), oval and jet black. They have cream colored flesh, a mild, sweet, earthy taste, and a soft texture, so they're often combined with assertive flavorings. Black beans, are also good sources of starches, fiber, B vitamins, iron, zinc, phosphorus, complex carbohydrates and calcium. About half of the calcium is lost during cooking. High percentages of the other nutrients remain however, even after cooking.
Black beans are high in protein, However, this protein is incomplete (does not contain all 9 amino acids), so grains or meats (which provide the missing amino acids) must also be a significant part of a strictly vegetarian diet.
To Soak: Sort thru the beans. Cover the beans with cold water and let sit about 5 munutes and remove anything that floats along with rinsing to be sure all dirt and foreign matter is removed. Drain well. Cover the beans with fresh water and boil about 5 minutes. Drain.
To Cook: 1 part beans to 3 parts stock or fresh water. * Soaking in cold liquid 2-4 hours should suffice. Then cook as per recipe or bring to a boil, then turn down the heat to a slow simmer (so the beans stay in their jackets) for about 2 hours. * Cold soaked and cooked at a very gentle simmer, beans should retain most of their nutrients.
