Raw Alfalfa Honey is the concentrated nectar of flowers (Alfalfa is a legume with blue flowers that blooms throughout the summer months) that contains many enzymes which the honeybees put into the combs.  Honey is made by bees in one of the world’s most efficient facilities, the beehive.  The 60,000 or so bees in a beehive may collectively travel as much as 55,000 miles and visit more than two million flowers to gather enough nectar to make just a pound of honey!    Raw honey is extracted from the combs and left to sit until most of the wax particles from the honey comb and pollen particles rise to the top and is skimmed off.  It is then bottled before it crystallizes.  You can have all the benefits of the live enzymes that are naturally occurring in the honey and comb.  It is Naturally Crystallized, Unfilitered, Unheated, Unpasteurized with Nothing Removed.

The color and flavor of honey differ depending on the bees’ nectar source (the blossoms).   The lighter colored honeys are mild in flavor.  Alfalfa honey is white or extra light amber in color with a fine flavor.  Clover honey varies in color  from water-white to extra light amber and has a mild, delicate flavor.

Baking Tips:
Because of its high fructose content, honey has higher sweetening power than sugar. This means you can use less honey than sugar to achieve the desired sweetness.

1. Substitute honey for up to half of the granulated sugar called for in the recipe.
2. Reduce any liquid called for by 1/4 cup for each cup of honey used
3. Add 1/2 teaspoon baking soda for each cup of honey used.
4. Reduce the oven temperature by 25°F to prevent over-browning;

    I use this honey in my tea and really enjoy the taste. It's the best honey I've found. Soft, smooth, and creamy. :)
