Polenta is an Italian style cornmeal which is more coarsely milled than traditional cornmeal. Polenta is very tasty, yet versatile and satisfying. Polenta is truly an Italian national dish. Polenta has been dubbed by some, as "Italian grits".
TO COOK: Boil 2 cups of water. Gradually wisk in 1/2 cup of Polenta. Lower heat to simmer while constantly wisking until polenta has thicken, about 6 to 10 minutes. Wisk in butter and salt to your taste.

1. Polenta is most commonly made into a salty porridge and served with a savory fresh tomato sauce or cooked and then poured into loaf pans to gel. After gelling, it is sliced and fried in olive oil and served either as a side dish or main course with different sauces and vegetable side dishes.
2. Another use for polenta is a type of dumpling called polenta gnocchi. The polenta is made into a stiff dough, laid out on a board and cut in diamonds. The resulting gnocchi are then boiled in salted water and used like potato gnocchi.
