Goat Milk Mozzarella Cheese is a stirred-curd cheese with a pleasantly mild taste. A little drier than traditional mozzarella, but perfect for cooking and snacking.

Goats are allow pasture access and free style loafing sheds. They are fed hay (dried grass) and a balanced mixture of grains. No synthetic growth hormones are allowed on the farms and every load of milk is screen for antibiotic residue.
Goat Cheese is not cold processed - Cheese's is made using the pasteurization process. A dusting of corn starch powder is used in the cryovac bags in order to package the Goat cheese.
No animal rennet is used. Enzymes are used instead. It is the microbial enzymes that replace animal derived rennet. Thus "rennet-less".
Goat cheeses are easier to digest than cow's milk cheeses because the fat cells are smaller, thereby more closely resembling human milk. This also allows the fat to be broken down and more easily assimilated. Even though goat cheese has less calories, it has a full, rich and creamy flavor. Goat cheese is lower in fat, calories and cholesterol. It also provides more calcium and fewer carbohydrates when compared to cow's milk. Many people who are lactose intolerant or have other milk-related allergies can eat cheeses made from goat milk.
For longer storage, freeze your goat cheese. The cheese can be frozen in small packages (in quantities of one pound or less). As long as the cheese is in good condition and tightly wrapped, its flavor, texture, and moisture content will remain unchanged. Thaw goat cheese slowly. Leave it undisturbed in the refrigerator for a period of 24 to 48 hours. Let the cheese warm to at least to room temperature before serving to maximize the flavor. For best flavor, use frozen cheese within a couple of months.
All goat cheeses are heat sensitive and can becomes grainy and separate when overheated. When using in recipes, heat until just melted.

Goat cheese is a satisfying alternate to eating lactose intolerant cheese products, like Mozzarella, Cheddar, Jack. In today's competitve market of cheeses- including goat cheese, Shiloh Farms has captured the flavor of Mozzarella without the side effects associated with lactose intolerance. Bravo to Shiloh Farms for creating a Mozzarella cheese from goat milk that is satisfying and tasty! Thank you for producing this lovely cheese--I wish my local health food store could keep it readily stocked. It's been off the shelves for awhile now! Please don't stop making it!
