Red Split Lentils are very small and most commonly used in Middle Eastern or Indian food dishes. They are generally found hulled and split, revealing their redish-orange coloring. These redish-orange lentils cook up quickly as a result of being small and split. They cook up fairly soft so they work well to thicken soups and to make purees. Lentils cook much faster than dried beans and do not require soaking. The green and brown lentils, hold their shape best after cooking. Lentils have good nutritional value, containing dietary fiber, B-vitamins, protein, and hardly any calories.
To cook: Sort and rinse. Add 1 cup of lentils to 2 cups of water or stock. Bring to a boil and then simmer on low heat for about 45 minutes or until tender. If desired add flavorings, such as herbs, garlic, and onions. Lentils do not need to be soaked before cooking. Lentils must not be overcooked or they will become soft and mushy. Different varieties require different cooking times. Do not add salt until the lentils are cooked because the salt will toughen them. 1. Cooking time is about 30 to 40 minutes for main dishes. 2. Cooking time is about 45 to 60 minutes for purees and soups.
Test frequently during cooking, then come to your own decision when the lentils are tender and taste "done." Remember, intended use dictates desired tenderness. It is better to cook lentils to a firm stage for salads, freezing and longer-cooking recipes. If you plan to puree or mash the lentils, cook until very soft.
