Carob is a tropical pod comes from the brown pod of the carob tree. Carob pods contains a sweet, edible pulp and inedible seeds. After drying, the pulp is roasted and ground into a powder that resembles cocoa powder.   It is claimed that the flesh of carob pods tastes similar to sweetened cocoa, and because it does not contain caffeine, the obromine or other psychoactive substances, it is promoted as a hypoallergenic substitute.  It is highly nutritious in vitamins and minerals, and is great to include in elderly nutrition snacks.  Carob Powder is a food ingredient used as an ideal cocoa substitute and sugar replacer with a flavor and color similar to cocoa. Carob has no caffeine and almost no fat.

Suggestions:
1. To ensure solubility, make a smooth paste of carob powder and warm water before adding to other ingredients. 
2. Substitute about 1.5 to 2 parts by weight of carob for each part of cocoa or chocolate usesd in beverages unless spices are used to enhance the taste of the drink then less carob may be used.
3. Since carob is sweet it requires much less sweetener than cocoa.
4. Carob treats can provide outstanding nutrition, as well as delicious flavor!
