5 cups Shiloh Farms Red beans, partially cooked (about 1# of dry beans)
1/2 lb. Sausage or Ham, or more to your taste
1 Onion (chopped)
2 sections Garlic (finely chopped)
2 tablespoons chopped Celery
1 tablespoon diced Parsley Flakes
1 large Bay leaf
Salt and Pepper to taste
2 teaspoons crushed red Pepper , or to taste
2 teaspoons Cayenne Pepper, or to taste
2 teaspoons Cumin
Directions:
While cooking beans on medium heat, cook the sausage. Saute in extra-light virgin olive oil, the onion, garlic, parsley, and celery. Drain sausage and add with the sauteed mixture to the beans. Mix in spices. Add a Bay leaf. Simmer on medium heat, stirring occasionally, for 2-3 hours, until tender and squishy. If mixture becomes too thick, add hot water to thin.
Cook Shiloh Farms Brown rice to be ready when the beans have finished cooking.
Serve the hot bean mixture over rice. (Some like it all mixed together, but try it both ways).
