Quinoa Pudding

2 cups cooked Shiloh Farms Quinoa
1 cup Apple Juice
1/2 cup Shiloh Farms Raisins
1/2 cup Shiloh Farms Nuts, chopped
1-1/2 tsp Vanilla
dash of Cinnamon
juice of 1/2 lemon
grated rind of one Lemon
pinch of Sea Salt
5 Strawberries

Directions: 
Combine: All ingredients (except strawberries) in a saucepan and bring to a boil. Reduce Heat. Simmer for 15 minutes. Pour pudding into individual dessert dishes and top with a Strawberry. Chill.  Due to the relatively high oil and fat content of Quinoa, the grains should be stored in glass jars in the refrigerator. For best results use the grains within a year.
