Quinoa Apple Salad

Ingredients:
1 cup Water
1 cup Apple Juice
1/2 tsp. Cinnamon
1 cup SHILOH FARMS QUINOA
2 large red Apples, diced
1 cup chopped Celery
1/2 cup Shiloh Farms Walnuts, chopped
1/2 cup Shiloh Farms Cranberries

Option 1:
2 Tbsp. chopped fresh Mint
1 Tbsp extra Virgin Olive Oil
1/4 tsp salt
1/4 tsp ground black pepper
1 lemon, washed and cut in half
OR
Otion 2:  1 cup non-fat Vanilla Yogurt

Directions: 
Place water, apple juice, cinnamon and rinsed quinoa in a saucepan and bring to a boil.   Reduce heat, cover and simmer until all of the liquid is absorbed, approximately 10 minutes.  Cool, then transfer quinoa to a mixing bowl and refrigerate, covered, at least 1 hour. 

Add apples, celery, dried cranberries and walnuts to the cooled quinoa. Mix well.

Option 1:   Add and Min in mint, oil, salt and pepper. Squeeze lemon juice over salad; toss to coat.  Place salad in refrigerator for 1 hour to allow flavors to mix in.

Option 2:   Fold in yogurt. Serve immediately. Serves 8.
