Ingredients:
1-1/4 cup Shiloh Farms Flour
1-1/2 cups SHILOH FARMS OAT BRAN
2 tsp. Baking Powder
1 tsp. Baking Soda
1/2 tsp. Sea salt
2 tsp. Cinnamon
1/2 tsp. Cloves
2 TBsp. Fresh Ground Flax Seeds (Meal)
1 cup Applesauce
1/2 cup Skim or 1% Milk
2 Tbsp. Oil
2 Eggs
1/3 cup Honey
1 tsp. Vanilla
Optional choices:
1 cup of Chopped Fresh Apples or any Shiloh Farms Nuts or Dried Fruits.
Shiloh Farms Brown or Golden Flax Seeds for topping
Directions: Preheat Oven to 375°F.
Soak the oat bran in the milk about 15 minutes while bran soaks up moisture. Blend together (dry ingredients) flour, flax meal, baking powder, soda, salt, cinnamon and cloves. Blend in separate bowl (wet ingredients) honey, vanilla, eggs, applesauce and oil. Mix soaked oat bran, wet and dry ingredients until well-blended. If adding chopped apples, fold them in. Spoon batter into muffin cups. Sprinkle with flax seeds. Bake about 15 to 18 minutes or until golden brown. Makes about 20 muffins.
