1 cup Skim or 1% Milk
3 Tbsp. Canola oil
2 Eggs
1/4 cup Honey
1/4 tsp. Sea salt
1 tsp. Cinnamon
1 Tbsp. Baking powder
1 cup Shiloh Farms Flour
1-1/2 cups SHILOH FARMS OAT BRAN
Your choice of:
1/3 cup chopped Shiloh Farms Walnuts, Pecans or any nut
1/3 cup Shiloh Farms Raisins, Cranberries or Chopped Dates
Directions: Preheat Oven to 375°F.
In large bowl, combine milk, eggs, honey, oil and mix well. Mix all dry ingredients along with nuts and fruits. Fold dry mixture into the liquid mixture. Oil muffin tin, or use paper baking cups and fill 2/3's full. Bake about 15-17 minutes. To test for doneness, toothpick should come out moist, but not wet. Makes about 12 muffins.
Suggestion: Soak the oat bran in the milk about 10 to 15 minutes before mixing with the wet mixture.
