2 cups soaked Shiloh Farms Christmas Limas
2 large sprigs of fresh Rosemary
12 fresh Sage leaves, tied together or in a mesh bag
1-1/2 Tbsp of Minced Garlic
Salt and pepper to taste
Optional Toppings:
Extra Virgin Olive Oil
Balsamic Vinegar
Minced Parsley
Directions:
To Soak: Place cleaned beans in a bowl of fresh cold water, cover and soak for 3 to 8 hours or overnight at room temperature; drain and rinse well. Or place beans in a saucepan with water to cover, bring to a boil, remove from the heat and soak for 1-1/2 hours, drain and rinse well.
Cover soaked, uncook beans with 2" of fresh water. Add fresh rosemary and sage and bring to a boil. Lower the heat and simmer until tender (about 1 to 2 hours). Drain the beans, saving the water, remove and discard the herbs.
Add the garlic to the hot beans and mash or partially puree using some or all of the cooking water until they acquire a smooth, thick consistency.
Season to taste with salt and pepper. Serve topped with a drizzle of olive oil or a small splash of vinegar and a sprinkling of parsley. Yield about 6 servings.
