Carrot Nut Cake

3/4 cup favorite Sweetener
1 cup Shiloh Farms Raisins
1 tsp Nutmeg
2 cups favorite Shiloh Farms Flour
1 1/2 cups Water
Pinch of Salt
1 cup grated Carrot
1 tsp Cinnamon
3 Tbs Butter
2 tsp Baking Soda
3/4 cup Shiloh Farms chopped Walnuts

Directions:  Preheat oven to 325 F.
Grease 13x9 pan and mix everything but flour, salt, nuts and baking soda in a medium saucepan. Bring to a boil, then let simmer for 5 minutes.  Pour into a bowl and let cool to room temperature.    When cool, mix in flour, baking soda, salt and nuts and put it in the pan. Bake for 40 minutes or untill a toothpick comes out clean.  Let it cool, and then top with your favorite cream cheese spread with an added sprinkling of crushed walnuts.
