Buttermilk Wheat Flake Muffins

Ingredients:
1/2 cup SHILOH FARMS WHEAT FLAKES
1 cup Water
2 Tbsp. Butter
2 Eggs, beaten
1 cup Buttermilk
2 Tbsp.  Honey
1 – 1/2 cups Shiloh Farms Whole Wheat Flour
1/4 cup Shiloh Farms Barley or Oat Flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Sea Salt
Shiloh Farms Sesame seeds for topping

Directions:    Preheat oven to 375°F.

Cook 1/2 cup of Wheat Flakes in 1 cup of boiling water, cover and simmer about 20 minutes.  Remove from heat and stir in butter until it melts.  Mix eggs, buttermilk and honey together and add to the cooked wheat cereal.   In a mixing bowl, combine the remaining ingredients, except for the sesame seeds.  Add the cereal mixture and mix well.  Spoon into a muffin pan with paper cups and sprinkle the tops with sesame seeds.

Bake about 20 to 25 minutes until the tops are golden brown.  Enjoy.
