Blueberry Bran Muffins

1 cup boiling Water
1 cup Shiloh Farms FINE BRAN
1/4 cup Honey
1/4 cup Oil
2 large Eggs
1 1/2 cups Shiloh Farms flour
1 1/4 tsp. baking Soda
1 cup plain Yogurt or Applesauce
1 cup Blueberries
1 cup Shiloh Farms nuts and/or seeds

Directions:   Preheat Oven: 350ºF
In small saucepan, mix bran and boiling water. Remove from heat and let stand for 10 minutes. Meanwhile, mix honey, oil and eggs; then add flour and soda alternately with yogurt or applesauce. Stir in bran, blueberries and nuts and/or seeds.  Fill greased muffin tins 3/4 full.   Bake for 25 minutes. Makes 18 muffins
