2 mashed ripe Bananas
2 Tbsp. Vegetable oil
1 Egg
1/2 cup fat free Milk
3/4 tsp. Vanilla extract
2/3 cup Shiloh Farms Brown Rice Flour
1/2 cup SHILOH FARMS QUINOA FLAKES
1/3 cup Organic Cane sugar
1-3/4 tsp. Baking powder
1/2 tsp. Cinnamon
1/2 tsp. Sea Salt
Dash of Nutmeg (optional)
1/2 cup chopped Shiloh Farms Pecans or Walnuts
Directions: Preheat oven to 375°F.
Combine bananas with wet ingredients, mix well. Mix dry ingredients in another bowl. Combine mixtures until blended but do not stir too much. Grease muffin pan (or use liners). Spoon batter about 3/4 full into about 12 cups. Bake about 16 minutes, or until knife inserted in center comes out clean.
