Sometimes called Trout or Appaloosa Beans, this heirloom variety stands up well to strong seasoning and holds its shape even after long cooking. Little wonder, then, that it has long been a favorite for slow-cooked soups, stews, and casseroles. An excellent source of protein and minerals, the vibrantly colored beans plump when cooked and produce a rich, aromatic broth.
Named because their coloring resembles the hide of spotted cattle, Jacob's Cattle Beans are thought to have been domesticated in the 17th Century by the Passamaquoddy Indians in the region now occupied by Maine and Eastern Canada.

To Cook: Sort and rinse. Cover with water and soak overnight. Drain, then bring 2 cups fresh water and 1 cup beans to boil. Reduce and simmer 1-1½ hours, or until tender. Drain and serve.
*Cold soaked and cooked at a very gentle simmer, beans should retain most of their nutrients.

3. Pair with pork, garlic, chilis, vinegar, or bitter greens.
4. Substitute anywhere you would use pinto or kidney beans.
