Banana Raisin Bran Muffins

Ingredients:  
2/3 cup boiling Water
1 cup SHILOH FARMS COARSE BRAN
1/4 cup Honey
2 large Eggs
1/3 cup Oil
1 1/2 cups Flour
1 1/2 tsp. Baking soda
1 cup plain Yogurt or 1 cup Applesauce
1 cup Shiloh Farms Raisins
2/3 cup mashed Banana

Directions: 
In small saucepan, mix Coarse Bran and boiling water. Remove from heat and let stand for 10 minutes. Meanwhile, combine honey, oil and eggs in large bowl. Add flour, soda and yogurt. Stir in bran mixture, raisins and banana.  Do not over mix. Spoon batter into lightly greased muffin tins 2/3 full. Bake at 350° for about 25 min. Makes about 2 dozen.

VARIATIONS: Add seeds and/or nuts along with raisins. For a less moist muffin, cut the yogurt or applesauce to about 3/4 cup.
