Banana-Quinoa Muffins

Banana-Quinoa Muffins

Ingredients:  
2 medium mashed ripe Bananas
2 Eggs
3/4 tsp. Vanilla extract
1/2 cup Shiloh Farms Quinoa Flour
1/2 cup SHILOH FARMS QUINOA FLAKES
1/3 cup Organic Cane sugar or 2 Tbsp of Honey
1/2 tsp. Sea Salt
2 tsp. Baking powder

Optional Choices
1/2 tsp. Cinnamon
Dash of Nutmeg (optional)
1/2 cup chopped Shiloh Farms Pecans or Walnuts

For waffles add
1/2 cup fat free Milk
3 Tbsp. Vegetable oil

Directions:  Preheat oven to 375°F. 
Combine bananas, honey, vanilla and eggs, mix well.  Mix dry ingredients in another bowl. Combine mixtures until blended but do not stir too much.   Grease muffin pan (or use liners). Spoon batter about 3/4 full into about 12 cups. Bake about 16 minutes, or until knife inserted in center comes out clean.
