SHILOH FARMS Sweet Apricot Kernels impart a sweet, almond-like flavor to foods. Like most nuts and seeds, apricot kernels are very nutritious, providing healthy amounts of protein, iron, calcium, Vitamin C, & B Vitamins in particular. You can add these kernels to vegetable dishes or grind them for use in desserts.
To get apricot kernels, apricots are first allowed to naturally ripen before being hand-picked and sun-dried. After harvesting the apricots, the kernels are extracted and allowed to dry under the sun in the crisp, clean mountainous air.
Guideline: Sweet apricot kernels contain trace amounts of amygdalin (as opposed to bitter apricot kernels, which contain significantly higher levels), a compound that is safe within normal consumption levels, but can become harmful in large doses. We therefore recommend eating no more kernels than half the number of whole apricot fruits that you would normally consume in one sitting. For example, if you would normally eat 2 fresh apricots at one time, we would recommend only consuming 1 apricot kernel.
1. Apricot kernels are a popular addition to amaretti cookies and biscotti, and can be used in place of almonds in baked goods.
2. Sprinkle ground or chopped apricot kernels over roasted vegetables, fruit, yogurt, soup, or salads; add to oatmeal, cereal, or granola.
3. Mix whole or chopped apricot kernels with chocolate chips, raisins, peanuts, and coconut to create your own trail mix.
